Primitivo is an Italian variety with roots in Croatia. Primitivo bears the same DNA association with Zinfandel. Primitivo thrives in the diverse terroir that Paso Robles has to offer.
Our Primitivo is a full-bodied bold wine that is moderately tannic with medium-low acidity. It is a lush and mouth-filling with sound structure.
Big, jammy, and rustic with chewy tannins. Our Primitivo is fruit driven with notes of blackberry and brambleberry. Savory rich baking spices of cinnamon and sweet tobacco with an underlying peppery note.
Food Pairings: Pair with BBQ of all kinds. Try with Moroccan-spiced pork ribs drizzled with zesty orange sauce. Try with teriyaki marinated tri tip kabobs on the grill served over jasmine rice. Pairs well with Italian dishes like eggplant parmesan, carbonara, and mushroom risotto. Try with a calzone stuffed with caramelized onions, tomatoes, olives and pancetta. Pair with mild Cheddar, Glouchester, Manchego, Muenster, Provolone, Parmesan and smoked Gouda.
